Recipes From Women's Fellowship Cooking class

Here are the recipes from last Fridays Fellowship!

~Fresh Pesto
*1 bunch fresh basil
*1/4 cup pine nuts
*1/4 cup grated Parmesan
*1 TB. fresh chopped garlic
*1/4 cup-1/2 cup olive oil
Add all ingredients into food processor or blender until smoothness desired adding olive oil as needed.
Season with salt & pepper



~Stuffed Chicken Florentine
*6-6 oz. portions boneless skinless chicken breasts(Trader Joe's carries these portions in there freezer section)
*8 oz. non fat ricotta cheese
*8 0z. frozen chopped spinach (squeeze out liquids)
*2 TB. chopped sun-dried tomatoes
* 1/4 tsp. each~Salt, pepper, nutmeg
Mix together cheese, spinach & tomatoes. Season with salt, pepper & nutmeg
Cut a slit in the chicken breast & fill with cheese filling

**Brush filled chicken breasts with pesto & sprinkled with Parmesan cheese.
Bake in preheated 375* oven for approx. 25 minutes

~Roasted Potatoes & green beans
*1/2 pound fresh green beans
*1/2 pound Yukon gold potatoes
*1/2 pound red potatoes
*TB. chopped garlic
*Olive oil, salt & pepper
*Any other fresh herb you would like to add(Rosemary, Tarragon, Dill...)

Blanch green beans(boil in salted water, add green beans and cook "Al Dente"~tender crisp)
Cut potatoes in cubes and add green beans to potatoes.
Drizzle with olive oil, salt & pepper
Roast in 375* oven ~approx. 45 min. until fork pierces potatoes with ease

~Strawberry & Asparagus Salad with creamy avocado & orange dressing
* 12 oz.Salad Greens of choice (spinach, spring, butter lettuce)
*1 basket strawberries (sliced)
*1/2 pound fresh asparagus~trimmed and peeled in strips with vegetable peeler
*1/2 cup toasted sliced almonds
~Dressing~
*2 avocados (pit removed)
*1/2 cup orange juice
Blend two ingredients in blender or food processor until creamy (add orange juice until thickness desired)

~Raspberry Chocolate Flat-bread Pizzas
*1 pack whole wheat flat-bread rounds (available @ Trader Joe's~6 per pack)
*3 oz. whipped lite cream cheese
*2 TB. raspberry preserves
*60 % cocoa dark chocolate chips(Safeway baking isle)
*1 basket fresh raspberries
*Other optional sprinkles(nuts, coconut, fresh mint...)

Stir raspberry preserves into cream cheese & spread on flat-breads.(not too thick!)
Top with chocolate & raspberries.
Bake 375* oven until warm & crispy approx. 12 minutes

And Remember that our Lord is our only true nourishment!!
